The mojito only has five ingredients, so each one has to be right. Fresh mint, fresh lime, a good white rum, soda, and a sweetener that dissolves instantly in cold liquid.

That last one is simple syrup. Barddies Simple Syrup gives clean, neutral sweetness with no grit, so you can build the drink straight in the glass.

Ingredients

  • 2 oz (60 ml) white rum
  • ¾ oz (22 ml) fresh lime juice
  • ¾ oz (22 ml) Barddies Simple Syrup
  • 6 to 8 fresh mint leaves
  • 2 oz (60 ml) soda water
  • Crushed ice

Method

  1. Add the mint, lime juice and Barddies Simple Syrup to a highball glass. Press the mint gently, do not shred it.
  2. Add the rum and fill the glass with crushed ice.
  3. Stir briefly to chill, then top with soda water.
  4. Garnish with a mint sprig and a lime wedge.

Questions

Why not muddle the mint hard?

Pressing releases the oils. Shredding releases bitter chlorophyll, which makes the drink taste grassy.

Can I use sugar instead of syrup?

You can, but syrup dissolves instantly in a cold drink. Sugar often stays gritty at the bottom.
