Hello there,
August is the deep end of the season. Rooms are full, event calendars are packed, and the bar is where the margin gets made or lost. One thing I keep hearing from bartenders this year: the industry is walking away from complicated, high-concept drinks and going back to well-built classics. That is a quiet win for anyone who runs on consistent, quality mixers.

Bars Are Going Back to Basics. Syrups Are the Fastest-Growing Shelf.

The signal from the 2026 trend reports is consistent. Bartenders are stepping back from high-concept cocktails and returning to a stripped-back approach built on bold fruit, clean acidity, and uncomplicated builds. Highballs, spritzes, and classics like the Paloma, the Mule, and the Tequila Sunrise are back at the centre of the menu. And the fastest-growing part of the bar station is the syrup, shrub, and bitters shelf. House-made and craft mixers are where operators are putting their attention.
Running alongside it is the mindful-drinking shift. The global non-alcoholic beverage market is projected to grow from $614.7 billion in 2025 to $644.1 billion in 2026, a 4.8% annual clip, on the way to $789.6 billion by 2030. Non-alcoholic beer alone posted a 22.1% jump in dollar sales. Guests want a real drink, with or without the alcohol, and they judge it on the mixer.
For the Caribbean, the timing is good. The regional tourism forecast points to roughly US$48 billion in receipts for 2026 and per-visitor spend near US$182 a day, after a record 32.2 million visitors in 2024. Those guests are ordering classics they recognise, at volume, in peak heat. The bar that pours a consistent Tequila Sunrise or rum punch every single time, all shift, is the one that keeps the ticket average up.

THE TAKEAWAY
House-made syrups are the trend, but they are also the bottleneck. They are inconsistent shift to shift, they tie up prep hours, and they walk out the door when a key staffer leaves. A bottled mixer with a fixed recipe gives you the same craft flavour with none of the variance. During August volume, consistency is the premium.

Tequila Sunrise
½ oz Barddies Grenadine
2 oz tequila blanco
4 oz orange juice
Ice | Orange slice & cherry
Pour grenadine last so it sinks and blooms. The gradient is the whole sell. Guests order it by sight.

Batch Rum Punch
8 oz Barddies Grenadine
16 oz aged rum
8 oz fresh lime
24 oz orange juice | Nutmeg
One sour, two sweet, three strong, four weak. Batch it in the morning, hold cold, grate nutmeg to order.

Mocktail
¾ oz Barddies Grenadine
5 oz ginger ale or soda
½ oz fresh lime
Ice | Cherry
The grown-up Shirley Temple. A real drink for the mindful-drinking guest and the daytime family crowd both.

PRO TIP (HIGH-VOLUME SERVICE): Grenadine is your speed-of-service colour tool. Keep it in a labelled pour-spout bottle at the rail and add it last on any layered build so it sinks clean. For the Tequila Sunrise, a ½ oz float lands the gradient every time without a bar spoon, which keeps ticket times down when you are deep in the weeds.

Three Things Worth Knowing This Month

01 / MENU DESIGN
Put the classics back on the top line. With guests trending toward recognisable drinks, a short menu of well-built classics outsells a long list of house originals. Name five or six the bar does perfectly, price them with confidence, and let the kitchen of the bar stay fast. A tight menu also cuts training time and waste, which matters most in the middle of a packed August.

02 / EVENT OPERATIONS
Batch the base, garnish to order. Peak-season events live and die on speed. Pre-batch the mixer and spirit components in measured containers before doors open, then finish each drink with ice, a fresh squeeze, and the garnish at the point of service. You hold flavour consistency across hundreds of covers, kill over-pours, and keep two bartenders doing the work of four.

03 / CONSUMER BEHAVIOUR
Daytime is where the no and low menu earns. Non-alcoholic beer is up 22.1% in dollar sales and the wider no/low category keeps climbing. In a resort or beach setting the daytime guest wants a real drink that keeps them going, not a soft drink. A proper mocktail built on the same mixer as your full-ABV pour carries a real price and a real margin, and it reads as craft, not compromise.

Our two newest flavours made their debut at TIC 2026, the Trade and Investment Convention at the Centre of Excellence in Tunapuna. With roughly 26,000 people through the doors, the Barddies team mixed over 1,000 cocktails across the three days of the show. A great run, and proof the daiquiri range holds up under real volume.
